From my experience with Vista+2gb of ram, playng Crysis or Gears of War hits 90-99% ram useage pretty quick.

it's all preference

i would say Intel (have less problems than most AMDs) and XP (Vista sucks up alot of resources) for example...XP you would need 1 gig to run a game...on Vista you would need 1.5 gigs
