Nowadays I see people quick-slash climb but they freeze in the air while they do it? Can anyone tell me how they do this.

It's just an animation thing where it looks like that to anyone spectating even though to them they are just wall slashing.

It is simply a viewing glitch. You are a spectator when watching them or when they are recording a video therefore you saw on youtube. Because of GunZ crappy viewing system, you cannot see the full animation at times, and you'll see a "cut down" "frozen" animation.
